I totally understand your frustration! It's so annoying when you accidentally set a default app and then you're stuck with it. I've done that before with image files. I think you need to go into your phone's settings, then find the 'Apps' section (or 'Applications Manager'). From there, look for the Google Photos app, and somewhere in its settings should be an option to 'Clear Defaults' or 'Open by default'. That should reset it so it asks you again next time.
